Ingredients – soft burrito shells, eggs, pico de gallo, salsa verde, refried beans, cheddar cheese. Sour cream & avocado optional.

Simply smear refried beans on burrito shell & put a little cheddar cheese on top. Warm up in microwave. Meanwhile fry 2 eggs however you prefer. I cook mine sunny side up for this recipe.

Place eggs on warm burrito. Put some salsa verde on eggs. I used fresh salsa verde in the pictures but jar version works just as well. I like sour cream or plain yogurt too. Wrap up burrito and cover with pico. Slices of avocado can be added. Sprinkle with sea salt and enjoy!
