What’s for Dinner- Cheesy Veggie Rice Casserole

It has been freezing for a couple of days and we actually got snow (which never happens here) so I decided to whip up a hearty yet healthy casserole. Started by roasting cauliflower, Walla Walla sweet onion and carrots in bite size piece covered in olive oil at 400 degrees for about 15 minutes. Boiled rice in chicken broth (this is not strictly vegetarian but could be) until fluffy. Mixed all these ingredients in large bowl. Set aside.

Next made a white sauce with butter & flour adding chicken broth and milk to make a sauce. Once thickened, I added about 3/4 cup of green salsa. I added sauce to rice & veggie mixture. Stir well and then pour into a baking dish. I topped with cheddar cheese and baked about 20 minutes at 350.

Result was a delicious dinner with tons of veggies and flavor. Add red wine and you have a beautiful winter dinner.
